Brunch : Savory Tuna & Cheese Roll-up (makes 6 servings)


INGREDIENTS:
2 cans Solid White Tuna
2 tablespoons butter
2 tablespoons chopped onion
2 tablespoons flour
1/2 cup milk
3/4 cup grated Parmesan cheese
2 cups biscuit mix

DIRECTIONS:
Drain tuna and flake. Cook onion in butter until tender. Blend in flour. Add milk gradually and cook until thick, stirring constantly. Add cheese and heat until cheese melts. Stir in tuna. Prepare biscuits according to package instructions. Roll into a rectangle. Spread tuna mixture on top. Roll up and seal ends and edges. Cut top in three places to let steam escape. Place on a well buttered baking sheet. Bake in a preheated 200 degrees C oven for 20 to 25 minutes until golden brown.
