Brunch : Lunar Tuna Scramble (makes 4 servings)


INGREDIENTS:
1 can Chunk Light or Chunk White Tuna in Water
1 medium tomato
3 tablespoons milk
6 eggs
Nonstick vegetable cooking spray
2 slices (about 60g) Swiss cheese

DIRECTIONS:
Preheat broiler. Open can, discard lid. Hold a small wire mesh strainer or colander over an empty sink; dump can of tuna into strainer, hold over sink until all of the liquid has drained. (To be sure all of the liquid has drained, gently press on tuna in strainer with the back of a spoon.) Place tuna in a bowl; flake into small pieces with a fork. Cut tomato into quarters; scrape with a small spoon to remove seeds and soft pulp. Chop into 1.25 cm pieces. Whisk milk into eggs in a medium bowl. Stir in flaked tuna and chopped tomato. Spray a 23 cm microwave-safe pie plate or shallow casserole with nonstick cooking spray. Pour in egg mixture; cover with plastic or lid, microwave on HIGH (100%) 90 seconds. Carefully remove plastic, stir the egg mixture with a fork. Re-cover, continue to microwave on HIGH (100%) about 3 to 3-1/2 minutes longer, stirring after each minute, until eggs are no longer runny and just barely firm. Arrange cheese slices over eggs. Place 1 to 2 cm beneath broiler for 30 to 40 seconds, or until cheese is melted.
