INGREDIENTS: 1 loaf French bread, sliced vertically into 8 pieces 1/4 cup extra virgin olive oil 2 cloves garlic, finely chopped 4 fresh roma tomatoes, finely chopped 454g of Tuna, drained 2 tablespoons chopped fresh parsley salt and black pepper, to taste 1 cup goat or feta cheese DIRECTIONS: Toast French Bread under broiler. In a small bowl, mix olive oil and garlic. Spoon olive and garlic oil mix onto toasted slices. In a medium bowl, mix chopped tomatoes, tuna, parsley, salt and pepper. Top each toast with tuna mixture and cheese. Place in oven at 175 degrees C for 10 to 15 minutes or until cheese is browned. |
